So, for some reason, in my house we either have way too many bananas, or not enough. Seeing as this week it was way too many, I had a couple overripe bananas waiting to be eaten. I hate to throw them out or waste them, so when I was at the store yesterday I bought the Chiquita Banana Bread Mix. I would say I’m quite fond of banana bread- it was always one of my favorites growing up. And, the mix seemed easy enough. All I needed was an egg, some water, and some bananas. I’m in!
So, when I got home I preheated my oven, took out a bowl to mix and started. I mashed up 1 cup of bananas, added the mix, 1 egg and 1/3 of a cup of water. It mixed rather easily and quickly. I poured it into a pan after spraying some nonstick cooking spray and waited for about 40-45 minutes.
It was a nice golden brown on top. I took a sliver and was instantly happy. Now this is BANANA BREAD! Fluffy, moist, sweet, absolutely delicious. I loved how I could even see the litte pieces of banana in the bread once it was cooked. It was even slightly sticky on the top of the bread.
The only thing I didn’t like was that it was rather low in fiber, and did not have any whole wheat flour in it. Other than that, this product gets 4 1/2 stars. I will CERTAINLY buy this mix again and make delicious banana bread. I might take the suggestion from the box and add some walnuts, as I love the banana bread walnut combination. I can’t stop taking a little piece everytime I walk by the bread that’s sitting on my table! 🙂
